Is there software out there that will do this.

Here is the scenario. I seem to do a lot of TV series burning lately. Basically, there are 4 discs, all with two hour long episodes on it. I rip the movies to avi files (divx) to save space on my HD. Is there a piece of software that will let me shrink all these files on to 1 dvd without deteriorating the quality too much and let me create a menu to access these episodes easily? (plus dont forget the whole converting avi files into a dvd format with menus)

I know te feeling. Currently, many people prefer to either keep them available on attached disk drives, so that a media player, pc, xbox 360 etc. can play back anything at anytime, or burn them as striaght AVIs so that no quality is lost.

If you really want to squeeze 8 hours onto one DVD... it is possible, but the quality would be pretty shocking I guess.

Are your single episode AVIs coming out as 350Mb or 700Mb (in rough numbers)? That equates to 8 x 350 = 2.8Gb or 58 * 700 = 5.6Gb. With a dual layer burner you can fit the AVIs on, but obviously need a DVD player that will recognise them.

I'm not sure if I would try an upconvert a DivX into DVD format and then try and fit 8 hours on one disc.

I use TMPGEnc DVD Author. I can squeeze 4 episodes of Doctor Who onto one disc with DVDShrink although I prefer to combine 3 episodes with a bit of working room.
